Eliana Pasquini has only been creating a journey for the culinary senses as a profession since 2004. From her flavorful and beautifully presented dishes, one would never guess that this woman, originally from Florence, sat behind a desk for 25 years, working as an accountant. It was always her passion to become a cook (she was considered “the chef” by her family), and she leapt into her passion with her husband Silvano’s encouragement. Confirming the validity of that leap, Eliana was awarded membership into the prestigious Accademia Italliana della Cucina in 2007. Her partnership with Silvano Mamprin created not only a marriage of two passionate souls, but also a marriage of talents that has culminated in a friendly, comfortable and attentive Bed and Breakfast in the Val d’Orcia. Silvano manages the hotel side of the Fattoria La Palazzina with incredible hospitality, while Eliana and her staff prepare the typically tuscan, but exquisite, dishes for the restaurant. Eliana’s artistic hand also is responsible for the many decorative changes to the Palazzina since the Mamprin management started in 2007.
In our cooking class, Eliana will use a novel approach to impart her culinary genius. Throughout the week, we will lunch, and also closely analyze each course at three very good restaurants in the area. The next morning we will re-create the previous day's meal, in a rustic style, using the locally grown fruits and vegetables, when available, and also using meat and diary products from local farmers. Therefore, the comparative cooking course will not strive to exactly duplicate the example at the primary restaurant, but will tailor the second meal to the style of Eliana.
In addition to actually cooking in the kitchen, the course will incorporate visits to local cheese makers (Pecorino di Pienza di Pianporcino), vineyards (Fattoria de Barbi or Fattoria Redi), and an olive oil frantoio (olive mill ) (Oleficio Enoteca Toscana in Castiglione d’Orcia) to see the process involved in each of these typical tuscan agricultural products and to taste the results! Other on-site visits will include a local market to view products available from the wandering purveyors of food products and a honey farm at the gardens of La Foce.
John Rega of www.foodingaround.com and Trim Media Productions will be making a documentary film of Eliana's cuisine. Not only will he film her while at work iduring her Cape Cod ventures, but he will join the April 2010 class in Tuscany to complete the picture in her homeland.
