  • Have you ever wanted to design food on a plate so it looks as if it came from Food & Wine?
  • Have you ever wanted to photograph your delicious plate of food so you can show your cousin on the other coast?
  • Have you ever wanted to stay in a gorgeous villa in Umbria and pretend it’s your home away from home?
  • Have you ever just wanted to have a vacation where you could sleep well, eat and drink well, play well and come home rested?

Then  John Carafoli has the answer for you:  he’ll show you how to:

  • Go to market (or the garden or field), smell, look (but not touch – it’s vietato )and select the ingredients;
  • Plan a menu from the freshest sources;
  • Put together a delicious meal;
  • Design the table commensurate with that delicious food;
  • Plate  food artfully;
  • Enjoy that food with gusto!
  • And throughout the whole process, photograph the meal’s purchase, preparation, plating, and perhaps most importantly, the diners in awe and amazement.  See some of John’s tips.

Unexpected Umbria cannot be a fully scheduled workshop;  we intend to leave a lot of free time in our agenda so that we can take advantage of local events that we might not know about until we are actually in Umbria.  To consider are sagre (food festivals that spring up unbeknownst to travelers, but not to its organizers, who work tirelessly for weeks to celebrate their special product), concerts, invitations and inclement or wondrous weather.

We will include a cooking class at a vineyard, with a lunch and wine pairing; an excursion to Norcia and Castelluccio, where salumi, truffles and lentils can be found in abundance; a visit to a olive farm; either a hands-on cheese making experience or a cheese tasting;  classes in the villa’s professional kitchen and prep room; and a farewell gala dinner that you will never forget.

 

But just in case you need a more definite schedule, here's a tentative one:

 

Day One:  Arrive and settle into villa.

               Get to know each other.

               Dinner at villa cooked by local chef.

Day Two:  AM market

               Cooking class with John

               Lunch

               Design & Photography Tips

               Dinner out.

Day Three:  Cooking Lesson at Antonelli  vineyards

                  Lunch

                  Cantina visit

                  Free Time

                  Dinner

Day Four:  Truffle hunt with lunch

Day Five:   Trip to Norcia and Castelluccio:  lentils, salami, cheese and more truffles

We want you to have time to completely relax and enjoy, also, so you can choose in which activities you’d like to participate.  Sit by the pool, read a good book, take a walk, converse with your fellow curious travelers, take a nap, cook with John.  We want you to have an energizing week at Campo Verde.

Villa Campo Verde is our accommodation for the week.  It is in the village of Eggi,  near  Spoleto.  In this blue-shuttered house, its palette evoking the colors of Provence, are 3 living rooms, a large dining room, a professional kitchen with prep room (perfect for design classes), 2 en-suite, accessible bedrooms on the ground floor, and 8 en-suite bedrooms on the first floor.  Outside you will find 2 courtyards, one with a barbeque, a swimming pool,  a lawn to play tag,  shaded areas, and an orchard.

The cost of this week-long culinary exploration is $3250, which includes  accommodation, all meals, ground transportation, excursions, teacher's and admin fees, and lots of fun.  Airfare is not included.

Please note that Villa Campo Verde is a non-smoking villa.
